As an example, in ancient Egypt, the cats would eat the mice that the people needed to get rid of. The people loved these creatures for it, and might have fed them any spare food the cats may have wanted. The cats may have associated food with humans, and grown closer towards them. They might have become tamer, and more affectionate towards them. This could have been the begginning of the domesticated cat.

As for ancient China, they probably did the same. Most is just tradition, and not domesticating the animal as such. For instance, a falcon can barely be domesticated. The Chinese do keep the animals like this, like tying string around birds they reared as young so that although they can eat the small fish, they cannot handle the big ones and bring it to the fishermen.
